I’m now on homerest waiting for the big day.I got sick of eating toast for breakfast for 3 days in a row and it’s just too tedious to go get breakfast takeout as the new year has just started and everyone is SO RAJIN to go to work.Which means full parking spots and with my walking speed of 2km/hr, I might just have to skip breakfast and proceed with lunch if I had to park far. So I decided to make breakfast muffins as I guess it’s the easiest thing I could whip up in no time. This wonderful Mocha Banana Muffins are not too sweet, has a little kick from the taste of coffee, some gooeyness from the banana and some crunch from the chocolate chips on top! No kidding these babies are delish, moist and filling too. The popular tip of making moist crumbly muffins is not to over mix. Let the batter have some lumps in it, don’t worry if the batter looked like it’s not done. If you over mix it, muffin will be chewy and densed. Here’s how the inside looks like:
12 Large Mocha Banana Muffins
WET INGREDIENTS
- 2 eggs
- 1/2 cup buttermilk
- 1/2 cup canola oil or applesauce or melted butter
- 1/4 cup strong black coffee (use espresso if you have)
- 1 cup mashed ripe bananas (don’t over mash, leave some texture)
- 1 teaspoon pure vanilla extract
DRY INGREDIENTS:
- 1 3/4 cup whole wheat flour
- 1/4 cup cocoa powder
- 1 cup light brown sugar
- 1/2 teaspoon baking powder
- 1 teaspoon baking soda
- 1/4 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1 cup milk chocolate chips (optional)
How to:
- Preheat your oven to 180 degree C.
- Sift together flour, cocoa powder, baking powder, baking soda, cinnamon, and salt.
- In a mixing bowl, beat in eggs, oil (or applesauce/melted butter), buttermilk, coffee, bananas, brown sugar and vanilla.
- Mix dry and wet ingredients JUST until combined and moist. (WARNING! Do not over mix your batter.)
- Fill greased muffin tins 2/3 full with the muffin batter. Sprinkle a handfull of chocolate chips on top. (walnuts or slices of bananas are great too)
- Bake in the preheated oven for approximately 20 minutes.
