Bored with the typical sardine sambal? Why not make curry out of the canned sardine in tomato sauce. Serve with rice or bread, you’ve got yourself a quick fix meal.A friend from Terengganu taught me how to make this. Great for anytime of the day
This small can is enough for 2 servings.
- A small can of sardine.
- Half onion sliced
- 3 cloves of garlic
- 1 tsp fenugreek seeds
- 3-4 Tbsp fish curry powder, mix with some water to form a paste.
- 1 cup of water
- 1 Tbsp Tamarind paste
- Optional: Curry leaves, tomatoes or okra.
How to: Heat 3 Tbsp oil. Saute’ onions, garlic and fenugreek seeds until a little browned. Add in the curry paste and tamarind paste and fry for 3 minutes. Add the water and sardines with the tomato sauce. Season with salt. Simmer for a couple of minutes.Ready!
