Sardine Curry

Bored with the typical sardine sambal? Why not make curry out of the canned sardine in tomato sauce. Serve with rice or bread, you’ve got yourself a quick fix meal.A friend from Terengganu taught me how to make this. Great for anytime of the day :)

This small can is enough for 2 servings.

  • A small can of sardine.
  • Half onion sliced
  • 3 cloves of garlic
  • 1 tsp fenugreek seeds
  • 3-4 Tbsp fish curry powder, mix with some water to form a paste.
  • 1 cup of water
  • 1 Tbsp Tamarind paste
  • Optional: Curry leaves, tomatoes or okra.
How to: Heat 3 Tbsp oil. Saute’ onions, garlic and fenugreek seeds until a little browned. Add in the curry paste and tamarind paste and fry for 3 minutes. Add the water and sardines with the tomato sauce. Season with salt. Simmer for a couple of minutes.Ready!

  2. My Bangla friend’s late father could only cook one thing – sardine curry. She made it for me once. Her version involves Thai green curry paste, onions, raw tomatoes, lime leaves, zest and juice (lemon in a pinch). The onions are sauteed lightly, the raw tomatoes are chopped and then the lime leaves and curry are added. All simmer together until juicy and luscious then the sardines join the party until they’re warmed through. Squeeze limes over everything.
